Arnaud Lopez has done countless jobs in and around Nuits-Saint- Georges since he started making wine in the 1980s. But for over a decade now, he has been hard at work in the cellars of Prieuré Roch,
a domaine that needs no introduction. While stillat Prieuré Roch to this day, Arnaud has starting bottling his own production, working with grapes sourced from trusted friends and growers, all of whom farm organically or with biodynamic principles.
His Savigny is from a plot planted in 1974 that belongs to his friend Jean-Philippe Camp. Arnaud chooses a completely natural vinification process with long, steady macerations typically lasting at least three weeks. He does very little in the way of cap management other than the occasional punch down by foot so as not to agitate the wine and compromise on aromatics. Élevage lasts up to 16 months and wines are bottled à la chèvre, a completely manual method that uses a small spigot in order to transfer the wine as gently as possible.
