An oxidative blend of Savagnin and Chardonnay. Traditional direct press vinification and completion of malolacticis followed by an extended ageing in old barrels. Most barrels are topped up, although 12% is allowed to develp a voile. It's rich and complex with notes of lemon peel, toasted nuts and a peculiar balsamic quality that reminds of sherry. This wine will benefit from a decant and is a great entrance point to Vin Jaune.
