Winemaking The Gamay is sourced from Beaujolais. The Aligoté is produced in Burgundy. Finally, the Grenache Gris-Noir and Carignan are grown in the Roussillon. All vinified separately in stainless steel tanks. Only whole bunches were used. 50% of the wines are matured in oak barrels and the other 50% in stainless steel. Blending of the different varieties takes place in May and the wine is bottled in June, following the harvest. Minimal intervention, unfined and unfiltered. No SO2 is added during vinification, only a minimal addition at bottling.
Tasting Note Fresh myrtles, wild blackberries and redcurrants matched with hint of cedar spice and lavender. Juicy with a bit more bite on the palate.
