'Éléments' is a project from Guillaume Noire in Anjou in the Loire valley. Guillaume farms without the use of pesticides and herbicides. In the winery he follows an honest hands-off approach.
His motto, 'only grapes should be found in wine', served has inspiration for the periodic table of varieties on the labels. These indicate the grapes used in each cuvée, generally focusing on the classic Loire varieties such as chenin blanc (Ch), groulleau noir and gris (Gn/Gg), cabernet franc (Cf) and gamay (Ga).
From orange, to pink or red, all wines are characterized by whole bunch macerations softly infused for a few days to several weeks depending on the style. This gives the wines a lovely unique tension and bite oscillating between sincere intense fruit and a rustic edge.
