The story of do.t.e. wines began with Filippo Calabresi’s discovery of a vineyard in Cortona. In 2014, he recovered old plantings of Syrah and Viognier, the former a grape variety that was no stranger to him as he previously ran Tenimenti d’Alessandro along with fellow winemaker Stefano Amerighi. Using grapes from 2 hectares acquired from Tenimenti d’Alessandro, Filippo continues this legacy today with his own personal label.

The name do.t.e. stands for ‘down to earth’, reflecting his mission statement to produce wine without the use chemical substances in either the vineyard or cellar. He carries out fermentation in a number of different vessels, ranging from cement vats to terra cotta and neutral barrels. With this experimental approach, Filippo produces wines that can be anything from feather light and ethereal, to deep and structured in texture. For the most part, his wines are monovarietal, each showing a different interpretation of his rich and varied terroir.

Early harvested Syrah grapes were picked on the last week of September and direct pressed. The juice is spontaneously

fermented in stainless steel. The wine is then aged in the same container and blended with Sorbara must, that was

sourced from the Modena hills and frozen during harvest. The wine then re-ferments in

bottle and it is not disgorged. The wine is not clarified or filtered and no additives were used at any stage.

Made with old vines Viognier grapes that were harvested on the 19th of September. The whole bunches are spontaneously fermented in stainless steel and undergo 9 days of skin contact. The wine is then racked and aged in the same container until it is bottled in June of the following year. The wine is unfined, unfiltered and no additives were used at any point.


Tasting
Note Deep and voluptuous. On the palate displays great intensity with concentrated stone fruit and some tropical notes. Toasty and savoury on the finish.

Moscato sourced from Mombaruzzo in Asti, Piedmont. The grapes were harvested and de-stemmed on the first week of September. The juice is spontaneously fermented in stainless steel and undergoes 11 days of skin contact. The wine is racked and aged in two 500L old barrels until bottling the following June. No clarification, filtration or additives at any stage.

co-fermented in stainless steel. The juice goes through 7 days of skin contact, before being racked and aged in a mixture of stainless steel and old barrels of 225L. The wine is aged until bottling in June of the following year. No clarification,

filtration or additives at any stage.

Sangiovese grapes are harvested on the 10th of September. The whole clusters are spontaneously fermented in wood and go through 7 days of skin contact. The wine is then aged for 5 months in a mixture of terracotta amphora and three old barriques. The wine is then blended and bottled without any filtration or clarification, followed by 4 months of ageing in bottle before release.


Tasting
Note It displays its textbook varietal tones of red cherry and a slight herbaceous note, but without the grip and tannins Sangiovese is sometime associated with. A real juicy and vibrant expression of the variety.

These are spontaneously fermented in whole clusters, undergoing a full carbonic maceration in stainless steel, and 10 days of maceration on the skins. The wine is then racked and aged in a mixture of stainless steel and one old barrels (225l) until bottling in the June of the following year. No clarification

and filtration, or additives at any stage.

Insyeme comes from a single vineyard planted with Syrah and harvested between 19th and 20th of August. Mostly whole-bunch fermented (approximately 75%) in cement, 20 days on the skins. Aged for 18 months in a terracotta amphora, a cement vat and a couple of old barriques. A further 6 months elevage followed after the wine was bottled without fining nor filtration.


Tasting
Note This wine takes you back to the flavour of Northern Rhone. Intense and pure with lip-smacking liquorice, ripe black cherries and a touch of spice on the palate.

From two different parcels of old Syrah vines harvested on the 9th and 14th of September. The whole bunches are spontaneously fermented in terracotta and go through 35 days of skin contact. The wine is racked and aged in four old barrels of 225L barrels each and one concrete egg of 700L until bottling in March of 2021. The wine is unfined, unfiltered and no additives were used at any stage.


Tasting
Note On the nose it displays black olive and vegetable notes mixed with some undergrowth tones. Great freshness and juiciness, despite the longer maceration and extended élevage.
